The strawberry, a member of the rose family, is unique - it is the only fruit with seeds on the outside rather than the inside.

Anyway, have you ever eaten a double strawberry before? Legend holds that if you break it in half and share it with a friend of the opposite gender, you will soon fall in love with each other.

Potassium-rich diet lessen stroke risk

People that enjoy a diet high in potassium may be at a lower risk of developing a stroke, compared to counterparts who consume less amounts of the mineral.



A review of 10 international studies involving nearly 270,000 middle-aged and older adults showed Swedish scientists that stroke risk decreased as people's reported potassium intake went up.

According to the results, every 1,000-milligram (mg) increase in daily potassium intake were associated with one percent lower odds of stroke in the next five to 14 years, the scientists wrote in the journal Stroke.



"Dietary potassium intake is inversely associated with risk of stroke," wrote lead researcher Susanna Larsson, of the Karolinska Institute in Stockholm.

Potassium is an electrolyte needed for maintaining the body's fluid balance, and is also involved in nerve and muscle control, and blood pressure regulation. Studies suggest that high-potassium diet helps maintain a healthy blood pressure and possibly protect against heart disease and stroke.



The researchers said that the mineral was specifically associated with a lower risk of ischemic strokes, those caused by a blockage in an artery feeding the brain, which account for about 80 percent of strokes.

However, potassium was not linked to lower odds of hemorrhagic strokes, which occur when there is bleeding in the brain, Larsson and her team added.



If potassium protects against ischemic stroke only, that would suggest there are reasons other than better blood pressure control, the researchers suggested.

RESEARCHERS have discovered that ursolic acid - a substance found in the fruit's peel - has natural body building qualities and could help people keep a toned, slender body.

It could even help with diabetes.

In experiments, they discovered that it boosts muscle growth by up to 15 per cent and reduces body fat by more than half.

It also has health giving properties - reducing blood sugar levels, cholesterol and harmful fatty acids, according to the new study.

Dr Christopher Adams, the study leader at the University of Iowa, said the substance could be especially useful in the elderly who naturally lose body muscle, known as atrophy.

"The old saying goes that 'an apple a day keeps the doctor away'," he said.

"Muscle atrophy causes big problems. It's also very common - it affects most people at some point in their lives, during illness or ageing. But, there's no medicine for it.

"We studied muscle gene activity in people with atrophy and used that information to find chemicals that might block atrophy.

"One of those chemicals was especially interesting. It's called ursolic acid and it's particularly concentrated in apple peels."

The study, published in the latest issue of the journal Cell Metabolism, showed that ursolic acid reduced muscle wasting in mice.

They believe the substance works by reprogramming genes that cause muscle wasting and fat build up.

"Interestingly, although ursolic acid increased muscle weight in mice, it did not increase total body weight, and further investigation showed that mice fed ursolic acid had less body fat than mice that were not fed the compound," he said.

Now they plan to try it on humans to see if it has the same effect.

"I was robbed but, oh please, don't write so much about that because I also got to taste the best and most amazing food here."

As a chef, where are your favourite places to visit for great food?

Rachel Allen: To be honest, Asia hands down. The variety of food in Asia is just amazing. I spent about four to five months travelling around Southeast Asia 12 years ago - I absolutely adored the experience. I really love the food.

The Mediterranean's great for food, too. Oh, Mexico and Guatemala as well. I love the smell of corn tortillas and coriander. For specific cities, I love New York for its constantly evolving and exciting food scene. I hardly go to the same place twice.

Being Irish, could you tell us a great place to visit in Ireland that's usually overlooked?

There are lots of beautiful places in Ireland. If you drive through Cork City towards West Cork and County Kerry, you'll see some really beautiful sights along the waters. The seafood is fabulous, there are villages with little buildings and houses in different colours. The pubs serve excellent food. Many cheesemakers live around there, too. It's all very pretty and quaint but not in a twee sort of way.

How do you really feel about airplane food?

You know what, it's always one thing I look forward to on the plane because it's a distraction. I often wonder why you don't get nice plates of charcuterie or a casserole - food that can sit more easily - rather than a dressed salad and a cooked steak which shouldn't be sitting for so long. But I know I shouldn't criticise because it must be a logistical nightmare getting the food to the plane and passengers.

How do you ensure you eat well on your travels?

Yeah, eating well can be hard when you travel, except in Asia as you can eat really well and cheaply at the street food stalls. It does take a bit of searching out. I always try to buy a food guide like Zagat for wherever I go. I like flipping a guide book while travelling even though I have an iPhone. Of course there's always friends' recommendations and Google!

We all think eating fruits means simply buying fruit, cutting it and just popping it into our mouths. You will benefit much more if you know how and when to eat.

Fruits should be eaten on an empty stomach…not as dessert after your meal as it is often done. If you eat fruit like this, it will also help to detoxify your system, supplying you with a great deal of energy for weight loss and other life activities.

Let's say you eat two slices of bread and then a slice of fruit.

As fruit digests faster than bread, the slice of fruit digests quickly and is ready to go straight through your stomach into your intestines, but its passage is blocked by the bread which takes longer to digest…In the meantime the whole meal ferments and turns to acid.

Consequently, when the fruit comes into contact with the food in your stomach and digestive juices, the entire mass of food begins to spoil.

So it is better to eat your fruit on an empty stomach or before your meals!

You have heard people complaining – Every time I eat water-melon after dinner I burp. When I eat a banana I feel like running to the toilet etc – Actually all this will not happen if you eat your fruit on an empty stomach.

The fruit mixes with the putrefying other food and produces gas and hence you will bloat!

Graying hair, balding, nervous outburst, and dark circles under your eyes…all these will not happen if you eat your fruit on an empty stomach.

It is incorrectly presumed that some fruits like oranges and lemons are acidic and will enhance acidity in your stomach.

Research however shows that all fruits become alkaline in your body.

When you need to drink fruit juice – drink only fresh fruit juice, NOT from the cans. Don't drink juice that has been heated up. Don't eat cooked fruits because you don't get the nutrients at all. You only get to taste.

Cooking fruit destroys all the vitamins.

Eating the pulp or whole fruit is far better than drinking the juices. Fiber is good for you.

If you drink the juice, drink it mouthful by mouthful slowly, because you must let it mix with your saliva before swallowing it.

A 3-day “fruit fast” is a very simple and effective way to cleanse and de-toxify your body. Just eat fruits and drink fruit juice throughout the 3 days and you will be surprised when your friends tell you how radiant you look!

During the “fruit fast” you can eat different fruits at different times, although occasionally mixed fruit salad would also be permissible and more interesting.

If you have mastered the correct way of eating fruits, you have the secret of beauty, longevity, health, energy, happiness and normal weight.

A well balanced diet helps to reduce blood sugar levels and is the cornerstone of diabetes management.

A healthy diabetic diet provides 45-60% of the calories from the carbohydrates, 10-15% from proteins and less than 30% from fat.


Guidelines for a diabetic diet include:

1. Maintaining ideal body weight. If one is obese, lose the excess weight to achieve a healthy body weight.

2. Limiting intake of refined sugars to less than 10% of total calories.

3. Distributing daily calories between 3 main meals and 3 small snacks for a day.

4. Being careful about when and how much carbohydrate is eaten at each meal.

Examples of low GI foods are rolled oats, muesli, whole grain bread, brown rice/unpolished rice, vegetables like, cauliflower and cabbages and fruits like plums, cherries and grapefruit and dairy products like low fat milk and natural yoghurt.

6. Limiting total fat calories to less than 30% of the total calories, and restricting saturated fat to less than 10% of the calories while including more monounsaturated fats in the diet. Sources of monounsaturated fats are olive oil, peanut oil, canola oil, avocados and certain nuts and seeds

7. Maintaining a healthy lipid profile by consuming foods which are low in saturated fats and cholesterol.

8. Limiting one's alcohol intake

It is important to know that no single food can help in the management of blood sugars for a diabetic. Instead, it is important to have a well-balanced diet which includes all food groups. This, coupled with lifestyle changes such as incorporating regular exercise, is the best way to remain healthy.
